The Noodles in Xi'an




According to incompletely figures, there are more than 50 kinds of noodles in Shaanxi province. In addition, Shaanxi people like eating noodle. There are more noodle restaurants on the Xi'an streets than other restaurants, the provincial city of Shaanxi province.

With the long history and rich culture of Xi'an, every kind of noodle is endowed with deep culture. Some kinds of noodles may have a history as long as thousands of years.

Every kind of noodle has its own features, just like the spinach noodle with stewed meat. When making the dough, people would add the spinach leaf into the flour. In addition, the noodle would look green after cooked. This kind of noodle contains the vitamin and leaf green that other noodles don’t contain.

When you enjoy the countless number of noodles in Xi'an, you also can see the process of making noodles. I assure you that you would like it. It is very interesting and just like art, just like the making process of the noodle spilled with boiling oil. The most fun part of making this kind of noodle is the last step. When the noodle is prepared and the seasonings are added, the chef would pour a large spoon of boiling oil on the surface of the noodle. Then the noodle is finished, very fun to see the process.

Traditional Xi'an Food: Chinese Hamburger



When I try to translate the name of a traditional Chinese food into its English name, I would feel relaxed if there is similar food in foreign countries. I just need to add the word Chinese in front of the food's English name, just like Chinese hamburger. If translated literally, Chinese hamburger is marinated meat in baked bun.

When I plan to introduce Chinese hamburger, I feel fortunate that there is hamburger in foreign countries that is similar to this traditional Chinese food. I don’t have to rack my brains to give it a simple and suitable name.

You can get what Chinese hamburger is just from its picture. It is very easy to make this food. People from foreign countries may think that it is just the simplified edition of the hamburger.

There are two features about Chinese hamburger. One is that the outside baked bun is so crispy. However, the meat in the middle of the bun is soooo soft and easy to chew. In order to know what it really tastes like, you may need to eat one by yourself.

I often see foreign people eating the Chinese hamburger around my living places. Therefore, there may be little difference between hamburger and traditional Chinese hamburger. Next time you come to China, you should taste this Chinese hamburger.

Traditional Xi'an Food: Sour Soup Dumpling

We all know that dumpling is very popular in China. In addition, there are many kinds of dumplings in China; the ways of making and eating dumplings are various. Here I would like to introduce a kind of traditional Xi'an dumpling: sour soup dumpling.




There are no special differences between sour soup dumpling and other dumpling. The main feature of the sour soup dumpling lies in its sour soup. The sour soup is made from 13 kinds of materials.

This traditional flavor snack has a long history of more than one thousand years. In addition, the filling of the sour soup dumpling is often the mutton. When eating the dumpling, it will be put into the special-made soup: sour soup.

The special sour soup contains tens of materials such as dried small shrimps, processed sesame, parsley, Chinese chive powder, butter, balsam, chicken fat, sweetened vinegar, soy sauce and so on.

Especially in the cold winter, to eat a large bowl of sour soup dumpling is a cool experience.

Xi'an spectacle: Guokwei




You may never imagine how large a cake can be. Here I will introduce one spectacle in Xi'an: Guokwei. You may never hear of Guokwei. It is a traditional Xi'an wheaten food with large and round size. How large it is? You can get it from the below imagine.


Guokwei is one spectacle of Shaanxi Eight Spectacles. People often say that it likes large and thick pot cover. It is famous for its aridness, crisp, white and spicy.


The most obvious feature is its large shape. The inside of Guokwei is soft and the outside is very crisp.

The popularity of Guokwei can be traced back to Tang dynasty, about more than 1200 years ago. In tang dynasty, a large number of farmers were gathered to build the mausoleum of the emperors. Because the projects were large and there were a large number of farmers, the food issue became a difficult problem. Therefore, the large Guokwei was invented. On the other side, the dry Guokwei is easy to kept and can supply a large number of people.

Nowadays, the Guokwei is still popular in Xi'an areas. In addition, the travelers from other places like to taste this so large Guokwei. You should not miss it next time you come to Xi'an.

Traditional Chinese Foods in the Ancient City Xi'an

Xi'an is one of the world's Four Civilized Ancient Capitals. In the long history, Xi'an has developed a rich food culture. Xi'an is located in the borders of different nations. Therefore, the foods in Xi'an have different nations' flavors.



One of the most famous foods in Xi'an is the soaking steamed bread with mutton. The high quality mutton or beef is boiled with seasonings such as Chinese red pepper, fennel, Chinese cinnamon and so on. After the meat is cooked, the soup should be prepared for other uses. Then the steamed bread is cut into blocks and put them into the soup. Then add mutton or beef and other seasonings. Now the soaking steamed bread is okay. You should not miss this soaking bread next time you go to Xi'an.



In Xi'an there is a kind of wine that is beneficial to all ages called Huanggui dense wine. This kind of wine can be tracked to Tang Dynasty about more than 1100 years ago. In addition, Huanggui dense wine has many health caring functions such as quenching thirst, invigorating blood circulation, strengthening the spleen, stimulating the appetite and moisturizing the lung. All the people in different ages can drink this wine at any time.
